Ingredients
    For meatballs:
  • 1 lb Ground Beef
  • 2 Large Eggs (whisked)
  • A few springs of fresh parsley (chopped)
  • 1/2 cup Breadcrumbs
  • 1/2 cup Pecorino Romano
  • 1/2 tsp Black Pepper
  • 1 tbsp Water
  • 1 tbsp Olive Oil
  • For tomato sauce:
  • 1 can Crushed Tomato (14 oz)
  • 2 clove Garlic (crushed)
  • 1/2 Large Onion (chopped)
  • 1/2 tsp Black Pepper
  • 1/3 cup Fresh Basil (chopped)
  • 1 tbsp Tomato Paste
  • 1 cup Water
  • 1 tsp Salt
Instructions
  1. In a bowl, combine all ingredients for the meatball to be marinated and refrigerate for at least 30 mins.

  2. Once marinated, use a cookie scoop to form your meatball. I used a medium size scoop.

  3. Heat olive oil in a pan and lightly brown your meatballs for about 5 mins minutes.

  4. In another pot, use the oil that was used to brown the meatballs to sauté garlic and onions.

  5. Sauté onions until softened.  Add in crushed pepper and tomato paste.  Continue to saute and add in the crushed tomato.  Stir and let it simmer for 20 minutes with the lid on.

  6. After 20 minutes, add a cup of water and fresh basil. Stir and let it simmer for another 5 minutes.

  7. Add in meatballs and let them cook in the sauce until it is done about 5 to 6 minutes.

Tips
  • Adding water to the meatball mixture will retain its moisture and not dry
  • You can make a head of the meatballs and store them in a freezer for a couple of weeks.  
  • Meatballs can be served with spaghetti or made as meatball sandwiches.
