For Beef marination:

Marinate the beef with all the above ingredients
Notes: By adding baking soda and corn starch, will tenderize the beef and break its fiber. It will give a very tender and melt in your mouth texture
Instruction

Boil water in a pot.

Start putting together all the ingredient to marinate the beef. Once you coat the beef with the marination, set aside.

Put together all the ingredients for the sauce. Mix and set aside.

Heat your pan to medium high, add 2 tablespoons of cooking oil.

Add in the marinated beef in a single layer and let it cook for 2 mins. Set aside when done.

Add in another 2 tablespoons of oil, sauté the aromatic (shallot, ginger and garlic) for 1 min. Add in the shitake mushroom first, sauté till mushroom is soft.

Add in napa cabbage and continue to sauté for 1 min. Take 2 tablespoons of sauce mixture to it to create a layer of seasoning throughout.

Continue adding the rest of the vegetables except scallions, the beef, noodles and lastly the sauce mixture.

Stir well until noodles are well coated. About 5 mins.

Lastly, add in the scallions, stir for another minute and you’re done!
Tips
- When stir fry noodles, it is best to use the kitchen tongs to scoop the noodles so not to break them. I use both the spatula and kitchen tongs to mix noodles.
- By adding baking soda, it will tenderize the meat and corn starch will create a silky and soft texture.
