Heat oven to 375F.

Fill a pot with water to boil the lasagna.

In a bowl, combine ricotta cheese, parmesan cheese, 1 ½ cup of mozzarella cheese, parsley, and 1 egg. Mix well to incorporate all ingredients and set aside.

Once water is boiling, add pasta sheets. Cook according to what is written in the packet. Add 3 tablespoon of salt. Once the lasagna is cooked, discard water and transfer to a pot or larger bowl and fill with cold water. Let is sit for 10 minutes.

Take the lasagna out and dry them in a sheet pan lined with kitchen towel.

In another pot, add olive oil to sauté the ground beef. Cook until the liquid from the beef has evaporates, about 5 minutes.

Add in garlic, tomato paste, onions, celery, and carrots. Continue to sauté for another 5 minutes. Add in crushed tomato and a cup of water. Mix well and let it simmer for 25 to 30 mins on medium heat until sauce has form and not watery. Check to see if salt is required, according to your preference. Let the sauce completely cool off before assembling the lasagna.

In a baking dish, spread a thin layer of the sauce so not to make the lasagna stick at the bottom.

Place pasta on a sheet pan, scoop a hip full of ricotta cheese mixture for the first layer, followed by another hip full of meat sauce. Roll the pasta; not too tight towards the end and place them into the baking dish. Continue until finish.

Pour in all the remaining meat sauce on top of the rolls, make sure it covers all the sides of the dish. Lastly, spread the 1 ½ cup of mozzarella to cover the top layer.

Bake in the oven for about 45 minutes.

At 40 minutes, change the oven setting to broil (medium setting) and finish off to brown the top layer.
